English Muffins




This is my first attempt at making English Muffins. They certainly smell good, tasted great and it was so easy to do. This recipe I got from The Fresh Loaf web page from kjknit's blog. The pictures take you from beginning to end.
There are lemon poppyseed scones beside the muffins which I enjoy almost every morning along with a great cup of coffee

My Hydrangea which James Knight has given to me. I shall call it Pretty Betty. Betty Knight was a dear christian friend whom I loved. I am so happy our lives pasted during our time here on earth. Betty along with Grace Henry were true examples of Godly Women. Both women have passed into eternity but I shall forever remember them.

This is the dough as I have let it set all night and rise some- I've kneaded for about 15 extra seconds to get large pockets of air and stretched sheets of gluten.



Here is my next try at No Knead Bread which came from the Editors of Cooks Magazine, Special Collector's Edition All-Time Best Recipes. I am preparing to teach a bread class and found that this article was really helpful. I truly love Artisan bread- it goes well with everything I enjoy eating. The color and texture is great along with the smell. It my own little bake shop right on Moscow Mountain.
Now I am on to making Onion Dilly Bread in the bread machine. It always smells so good while baking.

Homemade peach pie with mace

looks good, tastes great and I enjoyed a small piece. Mentioned that I worked at the Blue Owl and met the owner one day on the street in Kimmswick. Mentioned to her that I liked to make pies and if she needed anyone. She hired me on the spot. Her restaurant is featured in a well known cookbook by two sons on the road whose mom is well known in the South. I was also featured in a PBS special from the restaurant helping with cinnamon rolls and putting meringue high on pies.

Julia Child's Cookbook




Here is my book which I have had for some time and just now getting into trying Julia's recipes. The original cover has some ware but I have done a little patching just to keep it with the book.
Last night I made the dish Boeuf Bourguignon (Beef Stew in Red Wine) which was good along with potatoes/ salad and honey biscuits.

Fried Chicken and Baked Bean with Rootbeer


My good friend Cal Groen (Director of Fish and Game) for the state of Idaho shared his talents with Dutchoven Cooking and I helped with making of biscuits in my dutchoven.
My campsite was loaded with various things to try and bring interest to those who visited. Even the O'Hara Camp Host enquired to photo my props, etc. and mentioned he enjoyed seeing various campsites that were interesting shall I say.

Signs and Ironing boards filled with goodies

Camping on the Selway River in O'Hara Campground



Never bored at an Ironingboard Smorgasbord. What a time I had at camp with all the ironing boards wrapped with aprons which I had found at antique stores during my visit to St.Louis. The boards were topped with goodies for the kids and those who are still kids at heart.
This very old quilt which my son Jason picked up for me that belonged to the Fox family (his grandmother Luna's side)
Props are always a thing with me and I enjoy putting together a theme for each camping trip we take. Ken really doesn't think this is necessary but pitches in and allows me to bring my extra stuff.

Student boarder



Sandy and Kevin her son who has come to stay with us while he gets his Master's in Enginering at University of Idaho. He is a great guy and I'm happy to have him here at the house.
Mentioned to Kevin that I would be trying my Julia's cooking out on him. There came this alarming smile on his face which in turn I smiled fittingly.
August 24 Kevin gets Chicken Pot pie for supper with fresh corn on the cob. Aug 25th Kevin gets his lesson for making Arvid Ellson's pancakes, a recipe which Arvid got in 1948. Kevin tells me they taste like his grandmothers, so he and I put a batch together so we can have them in the morning. Kevin also got his lesson on making his bed. Briefly I communicate that if a job is worth doing, it is worth doing right and he'll make a wife happy knowing he has done it right. Kevin and I moved a desk from the sewing room to the living area for him to use for studying.
Kevin and his brother Cody grew their own watermelons this year and we were fortunate enough to get this beauty 33.3 lbs. Thanks Kevin

Creme Fraiche


Well, as Julia said "read recipe first" which I did but saw TBLS instead of teaspoon when making this Creme Fraiche. The 1 cup whipping cream to 1 tsp. buttermilk instead of a TBLP buttermilk made the cream fraiche a little more tangy. Husband Ken didn't like it but I can always use it in the pancake mix which I am making today.

Test Julia's recipes


Last week I got to see the movie "Julia and Julie". It was a hoot and I decided as well to try the recipes. I was so surprised to know that I had the book Julia first published already. Older book which I had found many years ago and never really used but I couldn't wait to get home and start reading it.
This is my first attempt at poached eggs. I was so proud of myself since it did turn out right. It was tasty as well. Looks like a mouse has been eating the french bread.

The Beauty of Flowers






















These are the beauties which bring me pleasure while sitting out on the front porch. Due to the wild animals, I try putting out things they will avoid. This has been trial and error since I moved from St.Louis, Mo to the Great Northwest, where I didn't have moose, deer,elk,bear and bobcat's coming through the yard. It is peaceful, quite and wonderful living on Moscow Mountain

Fishing, Mushrooms and Rhurbarb











Living in the wild makes this a treat when I get to find mushrooms and rhurbarb in my flower beds. Also getting to go fishing for the nights supper is so relaxing. I enjoy being able to pick and catch fresh stuff.

Cast Iron cooking for No Knead Bread











Shopping around to find these cast iron pans which work so well with No Knead Bread. Trying this was great since one only needs to put ingredients together and put it in the hot pan along with the hot oven and you have this great Artisan Bread. Also hunting for a bargain again, I look each and every time I go to thrift stores and other antiques stores to find these pans which do well camping.

Breading Making at Home




Making homemade bread is enjoyable and fun. I had found this Artisan Bread Cooker at a thrift store and hoped it would make the french loaf with a beautiful crust. It has a steamer underneath the unit and I was so glad I bought it. It was a $50. item but pd. only $4.99. What a buy.
